Lieblingsschnitzel on orange compote with sardine set
Ingredients for 4 persons
- 1 pomelo
- 1 fermented lemon
- 2 oranges
- 30 g preserving sugar 1/3
- 1 chilli pepper
- 1 piece of lemongrass
- Pickled sardines
- Caper leaves in fine cut strips
- Fillet the pomelo, flame the fillets with a blow torch and cut them to size. Set the sections aside. Cut the fermented lemon into wedges and keep warm. Finely dice the sections. Fillet the oranges and collect the juice. Mix the fillets with the pomelo and lemon. Add the preserving sugar and let stand a little. Knock on the lemongrass and cut into the chilli lengthways. Bring the fruit juice to the boil with the spices, let it cool down a little and let the fruit fillets cool down in it. Remove the spices and season to taste.
- Heat the Lieblingsschnitzel raw according to the preparation recommendation in pan at medium heat for approx. 4 min. each side or in deeep-fryer at170°C for approx. 4 min.
To serve, distribute the compote and place the FVZ Lieblingsschnitzel on top. Put on the pomelo and arrange the lemon. Place the sardine and spread the caper leaves.
