Lieblingsschnitzel with celery puree and passion fruit mayonnaise

Ingredients for 4 persons

Lieblingsschnitzel:

celery:

  • 1 celery bulb
  • 40 g butter
  • 1 piece of mace
  • 40 ml of water
  • Some lemon juice
  • 40 ml Ketjap Manis
  • 20 ml smoked olive oil
  • 4 ml chilli oil
  • 10 ml lime oil

raw food:

  • 2 stalks of celery
  • 1 peeled small carrot
  • 30 ml elderflower vinaigrette
  • 1/8 bunch of plucked chervil

garnish:

  • rapeseed
  • passion fruit mayonnaise

Preparation

celery:

  • Cut 12 sticks from the celery bulb and cut the sections into small pieces. Blanch the sticks in salted water and spread them out on a tray to cool. Vacuum seal the sections with the butter, mace and water. Cook in a water bath at 85 ° C for 60 minutes and mix to a puree while still warm. Vacuum the pens with the other ingredients and let them mature in the refrigerator for 2 days.

raw food:

  • Slice the celery thinly and finely chop the chervil. Cut the carrot into fine cubes and mix all the ingredients together. Season to taste with salt.

Lieblingsschnitzel:

  • Heat the Lieblingsschnitzel pre-fried according to the preparation recommendation in combi steam oven without steam pre-heated to 200°C for approx. 12-13 min.

Serving

Glaze the sticks in a little butter with the stock and arrange them with a little space between them. Arrange the salad in between and spray on the puree. Dress the passion fruit mayonnaise and sprinkle on the rapeseed. Put on the FVZ Lieblingsschnitzel.
